Awesome White bread with popcorn flour

A great white bread that is perfect for everything!

I've made this bread a few times and it comes out perfect every time. It comes together easily and with a mixer and dough hook, requires no kneading by hand.
When we first tried making popcorn flour, I was looking for some way to use it. Typically Jim finds out about these alternate foods and we try to make them and then I have to figure out what to do with them, other than put it in a jar to look cool. :) (My 26 year old daughter complimented my shelves on their nice esthetic.)
Thank you to the Brown Eyed Baker for the base recipe. I liked this recipe because it made two loaves and would use two cups of the popcorn flour. I wanted to be able to use more than just a small amount and wanted something that would show off the popcorn flavor, if there was one.
This may be great news or a disappointment, but you really couldn't taste any difference. If you look closely at the picture, you can see little flecks; that is the popcorn flour. I didn't notice it in the bread itself, but could see it in the crust.
So what's the point? Making popcorn flour was easy and used up some popped popcorn that we didn't eat. Yes, you can feed it to pigs or chickens too, but this was a way to reduce what I buy in the grocery store. I'm not in a position to make my own wheat flour (maybe someday!); so this helped me be a little more self sufficient.
Great White bread with Popcorn flour
Ingredients
4 1/2 teaspoons (14 g) instant yeast, (two .25 ounce packages)
3/4 cup + 2 2/3 cups warm water, divided
1/4 cup granulated sugar
1 tablespoon salt
3 tablespoons unsalted butter, cubed, at room temperature
7-8 cups all purpose flour
2 cups popcorn flour (or substitute pumpkin flour but it will change the taste)
Directions
Directions should always be short and to the point.
Your first step should focus on prep. E.g., Preheat to 375°F and line 2 baking sheets with parchment paper.
All middle steps should describe what the reader should do in a certain order. E.g., In a large bowl, cream the butter, sugars and vanilla extract until light and fluffy. Then add your eggs to the mix one at a time.
End with the final baking or cooking time. Describe what the final product should look like and when it should be served. E.g., Bake until the cookies have golden edges. Remove the cookies from the oven and set them in a baking rack for 10 minutes. Voila! Your cookies are ready. Serve them right after or store them in an airtight container for up to 1 week.
